Base: Any type of leafy greens; kale, romaine lettuce, spinach are good examples. Protein: Chickpeas or any type of beans; if you choose chicken, meat or fish, the portion should be the size of the palm of your hand. Nuts or seeds: hemp seeds, sunflower seeds, walnuts, almonds, pumpkin seeds are great examples. Sprouts: High in vitamins and minerals, I use sunflower sprouts. They boost the immune system and help with digestion. Lots of colors, all the colors of the rainbow, add tomatoes, green onions, cucumbers, bell peppers to your salad.
