what i eat in a day.. healthy meals to get back on track | VLOG download my fitness & wellbeing app with 100s of recipes and workouts: the energy ball recipe: 150g of rolled oats  200g of melted peanut butter 2 scoops of chocolate or vanilla protein 65g of honey 40g of chocolate chips mix all together and make balls!   the spaghetti recipe: Tbsp of extra virgin olive oil.  2 carrots – finely chopped.  1 celery rib – finely chopped.  1 onion – finely chopped.  1 red chilli – deseeded and finely chopped.  2 cloves of garlic – crushed.  500g of lean beef mince.  1 tin of chopped tomatoes.  400ml of beef stock.  100ml of red wine.  Tbsp of oregano.  Tbsp of Worcestershire sauce.  2 bay leaves.  Bunch of fresh basil – chopped.  300g of Penne.  grated parmesan heat olive oil in deep pan or casserole dish and sauté carrots, onion, celery for 5-10 mins or until soft.  add garlic and chilli and fry for another

2 mins.  add beef mince, season lightly and cook until browned.  add chopped tomatoes, fill the empty tin with water and add to pan. Stir well and simmer for 10 mins.  add beef stock, red wine, oregano, Worcestershire sauce, bay leaves and basil to pan. stir well and continue simmer on low heat for 45 mins.  10 mins before ready, boil a saucepan of water, add salt and cook penne.  drain penne, reserving some pasta water, before adding to sauce and mixing completely.   add a little pasta water to the pan and a handful of parmesan and stir for 2 mins on low heat.  serve with grated parmesan and fresh basil.  My Instagram: Twitter: Niall’s Instagram: All music used is from a paid subscription service Epidemic Sounds.
